It’s scary to start a new lifestyle… it’s even scarier to begin that new lifestyle in a new place!

Back in 2018, when mom and I decided to travel, we had no idea about what to do, or where to begin… we just knew we had the desire to travel!

But where to begin!

We posted on social media about our desire to hit the open road! Turned out we already knew people who traveled full-time in their RV! One couple had been traveling full-time for more than 19 years!

So, we set up times to meet with them and asked them all kinds of questions! Things we didn’t know to ask… they shared their years of experience with us!

The best places to stay… the least expensive ways to travel… things to consider such as keeping a budget so we wouldn’t overspend… businesses that offered discounts… and yes, even ways to earn an income while on the road!

And, when we didn’t have any idea where we wanted to go… we were told to think of places we’d like to visit, and plan our route in that direction! This not only allowed us to plan our travels, we realized we could include other interesting places along the way!

At the beginning, we were excited about the possibilities! But we were also scared! It’s scary starting a new lifestyle!

There were lots of things we needed to learn… and things we would learn along the way… such as how to fix stuff… how to handle driving or pulling an RV… backing a trailer into a campsite… finding the best routes that were RV friendly – just to name a few things!

But, we’d taken the step and hit the road! We put out fears in check by focusing on where we wanted to go, not on our fears! And we put our faith in our Creator to get us there safely!

How to Make a Basic Omelet

There’s nothing better than farm fresh eggs, straight from the hen, for breakfast!

So, what better way to eat those eggs, than by enjoying your basic omelet?!?

And, if you want, you can change it up by adding a few of your favorite meats and veggies! I like to add some spinach, feta cheese and tomatoes!

For the perfect, basic omelet, all you need are butter, eggs, salt and pepper, a pan (I prefer a good non-stick such as this one). That’s it! So let’s get started!

Basic Omelet

Here’s what you need:

  •  2 eggs
  • 1/2 Tbsp. butter
  • Salt and pepper to taste

Add these ingredients to make the Spinach and Feta Omelet

  • 1/2 cup fresh, chopped spinach leaves
  • 2 Tbsp. chopped plum tomatoes
  • 2 Tbsp. crumbled Feta cheese

Now, let’s put it all together:

  • Whisk together, the eggs, salt and pepper.
  • Melt the butter in the pan. Swirl the butter around in the pan to coat the bottom and sides.
  • Pour the egg mixture into the pan. Let it sit for a minute undisturbed, allowing it to begin to set.
  • With a rubber scraper, gently push one edge of the egg into the center of the pan, tilting slightly, allowing the still liquid egg to flow underneath. Repeat with the other edges until there is no liquid left. It it begins to stick, simply loosen the bottom with a spatula.
  • If you’re making the Spinach and Feta Omelet, here’s where you’ll want to add the spinach, tomato and cheese to one half of the egg.
  • Using a spatula or rubber scraper, fold the egg onto itself and cook for 1 minute longer.
  • Finish, by sliding the omelet onto a plate and enjoy!

The Great Adventure Homestead… Beginning Again!

I am a homesteader! However, I am not your traditional homesteader!

We don’t have chickens, goats, cows or pigs!

We don’t even have our own land to grow vegetables!

Nope!

In truth, mom and I have been traveling in our RV for just about 4 years!

I have been working at different campgrounds in the office, checking in guests, taking reservations, and answering phones, among other things!

When allowed, we plant a garden in containers…

We buy fresh, organic foods from local farmers..

and we have learned how to preserve our foods through dehydrating and canning…

But somewhere along the line, we got off track!

We started eating out more often, because it seemed to fit my hectic schedule! Burger joints became the norm and my health took a nosedive!

My most recent ‘job’ came to an end because the campground closed for the season, so now I am ‘officially unemployed.’ Well, in the traditional sense anyhow…

I am still working! I’m just self-employed!

I have my freeze-dried food business, which you can find HERE… as well as my photography! Yes, I found a company that is willing to pay me to do something I enjoy! How cool is that?!?

Since I am working for myself, I can work the hours I want, so I should be able to find the time to focus more on the homesteading side of things… with permission, I will once again grow a garden… start up preserving our foods, and focus on a more organic, homesteading lifestyle!

Therefore, moving forward, this homestead of ours has a renewed purpose, even if not in the traditional sense!

Here’s to new beginnings!

Strawberry, Pineapple and Banana Compote

We’ve been having chillier weather here in the north, thus making me hungry for some pancakes.

I could use my favorite maple syrup, but then I remembered that we have a surplus of freeze-dried fruits in our pantry! So I decided to try this recipe and it was a hit!

This ‘oh so easy to make compote’ can be used to top pancakes, crepes, and desserts such as ice cream!

Strawberry, Pineapple, Banana Compote

What you need:

Let’s put it all together:

  • Bring all ingredients to a boil in a 2-quart saucepan and boil until thick and syrupy (about 5-10 minutes).
  • Yields about 1.5 cups

Memories of my first time fishing!

The other day at work, a few of my coworkers got to talking about fishing at the campgrounds pond… this reminded me of a time when my best friend took me fishing for the first time…

It was a beautiful day outside! My best friend John was taking me out to his favorite fishing spot! He was going to teach me how to fish!

I remember the walk to the creek. He’d found a place to park off the road. And as we walked through a cornfield, I stumbled into a gopher hole. John had to help me climb out!

We finally reached the creek, and as he pulled out all his fishing gear, he showed me how to put the bait on the hook!

Since I don’t really like anything creepy, crawly, I was proud of myself for being able to bait the hook.

I even felt honored that he allowed me to use his brand new rod!

We talked quietly as we waited for the fish to bite, and eventually one bit!

I followed his instructions to the tea!

When I pulled the line out of the water, I saw a small bass on the hook!

John told me to grab the fish to unhook it!

Without thinking, I put the rod down. The fish wound up back in the water, along with Johns brand new rod!

He yelled “MY NEW ROD!”

He jumped into the creek to save the rod, and came out soaking wet!

I can’t understand why he never invited me to go fishing again!  (LOL)

Comfort Food in a Can

Comfort food – food that provides a sense of well being; typically associated with childhood memories or good old-fashioned home cooking!

With less than 3 weeks till we hit the road again, I find myself feeling very stressed! And to anyone who truly knows me, this can lead to stress eating!

I find myself craving comfort foods… my favorite happens to be mashed potatoes and gravy!

There’s nothing more enjoyable than the creamy smoothness of a great bowl of mashed potatoes and gravy! That warm fuzzy feeling you get as you enjoy the taste of the gravy… and every once in a while, finding that delicious lump of real potato!

If you’ve ever made mashed potatoes from scratch, you know exactly what I mean!

But sometimes, in this busy world we live in, making mashed potatoes from scratch is not an option! So, once again, I dug into my pantry of freeze-dried canned goods to make this oh-so-delicious meal of mashed potatoes and pulled pork gravy!

Mashed Potatoes and Pulled Pork Gravy

What your need for the potatoes:

And for the pulled pork gravy:

Let’s put it all together:

  • In a small saucepan, bring 1 cup water to a boil. Add green onions, salt and butter, Quickly whisk in sour cream and mashed potatoes.
  • Remove from heat and stir in black pepper.
  • In another small saucepan, melt butter and stir in pulled pork. Add gravy powder, water and whisk. Allow gravy to simmer until it thickens, stirring occasionally.
  • Scoop mashed potatoes into a small bowl and pour gravy over the top.
  • Enjoy!

This savory dish is great for lunch or dinner or any time you crave a delicious comfort food meal! It only takes about 20 minutes to make using the freeze-dried foods found here!

Preparing for Travel

Although it’s true we’ve decided it’s time to get off the road, we do have plans to travel at least one more time before settling down for good! And since we plan to travel, we need to prepare!

Over the course of the next few weeks, we will take the truck in to be serviced and check to see that everything on the RV is in working order as well!

First, we’ll pack up those things we don’t use every day, donating that which we no longer need or use anymore!

The packing part is my biggest challenge! Figuring out what to keep, and what goes is difficult – especially since I have a minimalists point of few, and I live with a mother who is a bit of a pack rat!

Todays challenge: clear out the cupboard above our sink!

I recently found a set of 4 plastic wine goblets we have yet to use in our 3 plus years on the road! Seriously?!? Out they go!

So, with that said, I’m off to clear out a cupboard!

Taking Care of Me… Part 2

It’s no secret, eating healthy is a challenge for me! Especially living with a mother who, in her old age, is becoming a finicky eater! But, taking care of myself is something I’ve begun to take very seriously!

However there is a down side to this new change…

Since I am no longer feeding my body all the sugary sweets or fatty fried foods, I am beginning to feel tired and lethargic. I don’t seem to have the strength to do much of anything!

My body is going through withdrawal!

Talking with my doctor, I’m told that every time we change our eating habits – good, or bad – our bodies react to these changes! He also went on to say that this tiredness will pass… it may take a few days… but it will pass… and, as my body adapts to my healthier eating habits, it will begin to work as it should, thus the fatigue will lift! That’s good to hear!

In the meantime, I will press on through this feeling of weariness, and rest when I can, knowing that this too shall pass!

Taking Care Of Me… Part 1

Recently, I shared with you that I was Giving Myself Permission to Take Care Of Me! You’d think this should be an easy task! But with work obligations and familial ones as well, I find myself torn with the idea that I need to take care of others first!

For example… Mom and I share our little homestead on wheels. She doesn’t get around as well as she used to. She’s 80. That’s understandable! However, making sure she is eating properly and making meals that she likes is becoming more and more difficult! She’s set in her ways! She likes certain foods… foods that aren’t exactly healthy!

I don’t want to be one of those persons who makes one dish me for her, and another one for me! Call me crazy, but I feel that this is too much like work! Yet when I put together a meal in the slow-cooker, she comes up with the excuse that she doesn’t like all her food to be touching! And I thought kids could be picky eaters!

Therefore, instead of making something in the slow-cooker, I wait till I get home to make dinner. I am usually so hungry, that we wind up going to the closest burger joint, instead of taking the time to make a proper, healthy meal!

This has to stop!

As I plan for meals that we can both enjoy, I find myself remembering the days of my youth… when mom made a dinner for us, she did NOT make two different meals… she made one meal for everybody, and if you didn’t like it, you didn’t eat until the next meal!

You’d think with our roles reversing, I could get away with that line! Nope! She informs me that she’ll just make something herself… but then, she usually just snacks on whatever we have in the pantry – usually chips and soda! Sigh!

This too, has to stop!

So, the challenge continues in trying to eat a healthy diet!

I know deep down, that by taking care of myself, I am showing my gratitude to God, yet I continue to battle with the thought that I need to take care of her first, and me last!

Therefore, the challenge to eat healthy continues, but I will prevail! I will not give up!

It’s All About Attitude

Attitude is an inward feeling expressed by outward behavior.

Recently, during my morning quiet times, I’ve been reading a book called Battlefield of the Mind. In a chapter called Be Positive, I came to realize that I am a very negative person…

You know, the glass is half empty… an always waiting for the other shoe to drop kind of person.

This sort of thinking is very negative! And as I just expressed, our attitude… our mindset… our feeling on the inside… it’s expressed by our outward behavior.

Sometimes, what we are thinking or feeling, if we don’t share it with others, we assume, they don’t know what’s going on in our lives.

However, what we think in our heart, we become. So, if we are negative in our thinking, we become negative… our characteristics tend toward the negative… and it shows by what we say or what we do.

Even scriptures tell us ‘as we think in our hearts, so we become.’ (See Proverbs 23:7)

Moreover, our attitudes (good or bad) can be seen without ever speaking a word!

Our attitudes color our experiences, Happiness and depression… these are issues of the heart. What we are on the inside has more impact on our emotional state than our circumstances!

However, if you are like me, it takes effort to think positively… I have to think about what I am thinking about!

There is a verse in the bible that says ‘a merry heart does good like medicine.’ Therefore wouldn’t it do me good to put in the effort it takes to think positive… to have a good attitude.

Consequently, if I have a great attitude about things inwardly, this will begin to show on the outside!

For example: The campground where I am currently working will be closing down for the season in just under two months. Usually, I already have the next job planned, and know where I will be going!

That’s not the case this year!

As a single workamper, I am finding it harder and harder to find jobs, simply due to the fact that more and more campgrounds would rather hire couples. The reasoning? Why not hire two workers for the price of 1 site?!? Or simply, some of those same campgrounds would rather hire locals and utilize a site for paying guests rather than a workamper.

I get it… but it does make finding a job, and a place to park my unit more difficult.

So, I could look at this situation 1 of 2 ways… My negative side could say “Whoa is me! I can’t seem to find a job! What am I ever going to do! I’ll never find a job in time!

Or, I could look at it with a positive attitude and see it as an adventure! Which, by the way, is what mom and I had originally intended!

So, no crying over spilled milk here!

It’s all about the attitude!

Let’s see where the road takes us next!
